all month long every weekend i'm making pizza dough and trying them out to see what the best one is.
last weekend i did rose levy beranbaum's recipe in two variations....one w/ the italian "00" flour and then the other w/ the regular all purpose flour
both were good. the italian one was better in flavor and texture....it had a little more chew to it...the all purpose was crispy and crunchy but not like a cracker. it was good.
i'm looking for the perfect pizza dough cause sometime in february we are having friends over for a pizza "challenge" couples each bring their pizza and we get to try it out....the only rule is the crust has to be homemade...no mixes or pre-made doughs.
i'd say the sauce has to be homemade too but for me i have a case of Don Pepino's sauce which i'm gonna reduce down for more flavor. it's a fuckin great sauce though as is ....
anyone have a can't miss pizza dough?
